Favorite Salads
Forbidden fruit is responsible for many a bad jam.

Strawberry Pretzel Salad Crush pretzels to make 2 2/3 cups. Mix with 3 Tbsp sugar. Add 1 1/2 sticks margarine/butter melted. Stir well. Press into 9 x 13 pan. Bake for 10 minutes at 350 degrees. Cool. Cream together 8 oz of cream cheese and 1 C sugar. Fold 9 oz of Cool Whip into cream cheese mixture. Spread over pretzel layer. (Make sure this goes to the sides of the pan and covers everything- otherwise your next layer seeps to the bottom.) Dissolve 2- 3oz strawberry Jellos in 2 cups of hot water. Add 2 10-oz frozen strawberry packages and 1 small can of crushed pineapple (drained). Pour over cream cheese layer. Refrigerate till set. You can use other fruits and other flavors of Jello. Cherry Coke Salad 10 1/2 oz maraschino cherries, chopped Pour Jello powder into large bowl. Heat juices (not boiling) and pour over Jello powder. Stir until dissolved. Cool. Add Coke and stir. Chill in refrigerator until starting to gel. Add chopped cherries, pineapple and nuts, mixing thoroughly. Chill until firm. This can be made a day before it will be served. The day you will be serving this salad, make whipped cream. (You could use Cool Whip, but the whipping cream is much richer and better!) Put whipping cream in a cold bowl. (Also good to chill beaters.) Add 1/3 C sugar to 1/2 pint of Whip Cream. Beat until very stiff. Spread on top of Coke Salad and sprinkle with a few nuts. Chill until ready to serve. Billie Brazell |

Broccoli and Cauliflower Salad 1 head of cauliflower, broken into small pieces Marsha Harrington |
Fancy Salad 1 large container of cottage cheese Use orange Jello with mandarin oranges. Strawberry Jello with strawberries, etc. Mix all ingredients together, put in a pretty bowl and chill. Trudy Hawkins |
