Favorite Salads

Forbidden fruit is responsible for many a bad jam.

 

Strawberry Pretzel Salad

Crush pretzels to make 2 2/3 cups.  Mix with 3 Tbsp sugar.  Add 1 1/2 sticks margarine/butter melted.  Stir well.  Press into 9 x 13 pan.  Bake for 10 minutes at 350 degrees.  Cool.

Cream together 8 oz of cream cheese and 1 C sugar.  Fold 9 oz of Cool Whip into cream cheese mixture.  Spread over pretzel layer.  (Make sure this goes to the sides of the pan and covers everything- otherwise your next layer seeps to the bottom.)

Dissolve 2-  3oz strawberry Jellos in 2 cups of hot water.  Add 2  10-oz frozen strawberry packages and 1 small can of crushed pineapple (drained).  Pour over cream cheese layer.  Refrigerate till set.  You can use other fruits and other flavors of Jello.

Cherry Coke Salad

10 1/2 oz maraschino cherries, chopped
1 small can crushed pineapple
1 large pkg Cherry Jello
12 oz of Coca-cola
2 C fruit juice (drain juice from cherries and crushed pineapple. Fill the rest of the way with pineapple juice)
1 C chopped nuts (reserve a few to sprinkle on top of whipping cream)
1 small container of whipping cream

Pour Jello powder into large bowl.  Heat juices (not boiling) and pour over Jello powder.  Stir until dissolved.  Cool.  Add Coke and stir.  Chill in refrigerator until starting to gel.  Add chopped cherries, pineapple and nuts, mixing thoroughly. Chill until firm. This can be made a day before it will be served.

The day you will be serving this salad,  make whipped cream.  (You could use Cool Whip, but the whipping cream is much richer and better!) Put whipping cream in a cold bowl.  (Also good to chill beaters.)  Add 1/3 C sugar to 1/2 pint of Whip Cream.  Beat until very stiff. 

Spread on top of Coke Salad and sprinkle with a few nuts.  Chill until ready to serve.

Broccoli and Cauliflower Salad

1 head of cauliflower, broken into small pieces
1 stalk of broccoli, broken into small pieces
3-4 little green onions, chopped
1 C mayo (real mayo is best)
1/2 C sour cream
1 T Vinegar
1 tsp sugar
dash of worstershire sauce
dash of tabasco sauce
Salt and pepper to taste

Fancy Salad

1 large container of cottage cheese
1 (12 oz) bowl of Cool Whip
1 small box of Jello (your choice)
Fruit

Use orange Jello with mandarin oranges.  Strawberry Jello with strawberries, etc.

Mix all ingredients together, put in a pretty bowl and chill.

Mom's Cranberry Salad

2 c. cranberries
1 c. sugar
1 c. water
15 large marshmallows
1 pkg. black cherry gelatin
1 c. chopped apples
1 c. chopped celery
1 c. pecans

Cook cranberries, sugar and water until cranberries pop open.  While hot, add marshmallows and stir until
melted.  Dissolve Jello in melted mixture and cool.


Add chopped apples, celery and nuts.  Mix well.  Pour into a pretty bowl.  Chill.

It is a tradition to have this Thanksgiving and Christmas at my mom's house.

Layered Salad

1st - One bunch chopped spinach
2nd - 2 c. shredded lettuce
3rd - 1 lb. cooked bacon, crumbled
4th - 6 boiled eggs, sliced
5th - 1 can sliced water chestnuts, drained and rinsed
6th - 1 box frozen green peas
7th - 1 bunch green onions, chopped
8th - Dressing spread over top to seal
9th - Grated Swiss, Monterey Jack or Mozzarella cheese

Layer in 9" X 13" dish

Dressing:
1 pkg. ranch dressing mix
1 c. sour cream
2 c. mayonaise
Mix well.

I use a combination of greens; leaf lettuce, iceberg and spinach whatever you like, then just mix them together.  I never follow the recipe, I just use
enough greens for the amount of people that I'm serving and adjust accordingly!  Enjoy.
