Favorite Side Dishes

Mom's Potato Salad

5 lbs cooked potatoes (cold, cut into bite size)
6 hard boiled eggs (chopped)
1 large onion (chopped)
1 tsp sugar
1 tsp prepared mustard
1/2 tsp celery seed
1 tbsp vinegar
1 or 2 stalks of celery (chopped)
1/4 C green peppers 9 (chopped)
1/2 cucumber (chopped)
salt and pepper
Salad dressing or Mayo
Paprika

Mix sugar, mustard, celery seed, vinegar, salt and pepper into mayo or salad dressing then pour over the other and mix to blend.  Add enough dressing/mayo until it is all moistened.  Top with paprika.

Hash Brown Casserole

1 (2 lb) bag frozen hash browns
1/2 C chopped onion
1 C shredded cheddar cheese
1 C sour cream
1 can cream of chicken soup
1 stick melted butter

Mix all--will be kind of a dry mix, don't worry about that.  Grease lightly a 9x13 casserole dish.  Pour into dish and top with the following if desired.  It's good either way.

1 C corn flakes and 4 Tbsp butter, mixed.

Bake at 350 degrees for 1 hour.

This is like a baked potato with all the goodies but no muss no fuss at the table!!!  Enjoy!!!
